Su filosofía se arraiga en la tradición japonesa minimalista: dejar que la calidad suprema del pescado hable por sí sola, sin ornamentación innecesaria. Cada mañana, viaja personalmente a la lonja de Valencia para seleccionar los mejores ejemplares de la jornada, buscando precisión, frescura y la personalidad única de cada pieza. Su técnica es refinada, sus cortes decisivos, su presentación impecable. Años de dedicación y viajes a Japón lo han moldead como custodio de una tradición culinaria que honra tanto el ingrediente como el comensal.

Condiciones de reserva

  1. Alergias e intolerancias

Cualquier alergia o intolerancia alimenticia debe ser comunicada al realizar la reserva.

En caso de alergia a pescado o marisco recomendamos no reservar, debido a que nuestra propuesta gastronómica se basa en estos productos.

2. Opciones de menú

Aunque aceptamos niños, no disponemos de menú infantil. Por las características de nuestra experiencia omakase, recomendamos la asistencia de mayores de 12 años.

Ofrecemos una opción de menú vegetariano y vegano bajo petición. Para poder garantizar la disponibilidad de los ingredientes y la correcta preparación de la experiencia, es necesario solicitarlo con un mínimo de una semana de antelación a la fecha de la reserva.

3. Puntualidad

Le rogamos llegar a la hora acordada para su reserva. La planificación del servicio se organiza para garantizar la mejor experiencia posible. Las reservas con retrasos superiores a 15 minutos podrán ser canceladas y quedar sujetas a la política de cancelación vigente.
